In the US there are four grades of syrup: Golden, Amber, Dark or Very Dark. The lightest syrup (Golden) will have the most mild taste, and the maple flavor will become more robust the darker the syrup is. If you have never had real maple syrup or are unsure what grade to choose, we recommend Amber as a standard middle of the road option. It will be what most folks recognize as "typical" maple syrup. If you like a more robust maple flavor, we recommend Dark. 

The jugs are specially designed, food grade plastic. They are intended for syrup storage for the duration. Syrup can be kept in the unopen container for several months, but please note that once you open your jug, it will need to be refrigerated to maintain freshness.
